One Pot Spicy Cajun Chicken & Rice

One Pot Spicy Cajun Chicken & Rice

I truly wish these pictures did this dish justice but they simply don’t. you could’t seize all the flavors and highly spiced goodness as it should be in photos and believe me, I clearly genuinely tried. this is one of those instances when you really want scent-a-vision.

Among the ease of this dish and the hundreds of exceptional duper yummy flavor, i will’t get sufficient of it. since the husband has been out of town, I’ve been consuming leftovers all week and i'm no longer complaining approximately that! I’ll take highly spiced cajun bird and rice leftovers any day!

One Pot Spicy Cajun Chicken & Rice

INGREDIENTS:

  • 4 boneless skinless chicken breasts, pounded to even thickness
  • 4-5 teaspoons cajun seasoning, divided (store-bought OR see my easy homemade seasoning below!)
  • 1 cup rice, uncooked
  • 2 1/4 cups low sodium chicken broth
  • 1 whole bell pepper (any color, OR 1/2 of two kinds - I used yellow and red)
  • roughly chopped cilantro

Homemade Cajun Seasoning

  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes
  • 3/4 teaspoon oregano

INSTRUCTIONS:

  1. Season fowl breasts on each sides with approximately 2 teaspoons of Cajun seasoning. Drizzle a massive pan or skillet (one that has a lid) with oil and cook dinner fowl breasts for about 1 minute on each facet over medium-excessive heat, just lengthy sufficient to brown each aspect of the hen. transfer to a plate.
