INGREDIENTS:

  • 1 deep dish pie shell {I use frozen and let it thaw for 15-20 minutes}
  • 4 eggs
  • 1 cup heavy cream
  • 1 cup chopped roasted red peppers {from a jar; drained and patted dry}
  • 1/4 cup chopped mushrooms {fresh or from a can}
  • 4 oz goat cheese
  • 1 to 1 1/2 cup shredded Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon white pepper

INSTRUCTIONS:

  1. Preheat oven to 350° F.
  2. Using a fork, poke the bottom and sides of crust and pre-bake for 5 minutes. Remove and set aside.
  3. Sprinkle Parmesan cheese, red pepper, and mushrooms into bottom of pie shell. Top with crumbled goat cheese.
  4. Combine cream, beaten eggs, salt, pepper and nutmeg in small bowl until blended. Pour into pie shell.
  5. Bake for 20 minutes; remove from oven and cover edges of crust with aluminum foil to prevent over-browning.
  6. Put back into oven and continue to cook 20-25 minutes or until center looks firm and doesn’t jiggle any longer.
  7. Cool for 5-10 minutes on wire rack before serving.

I came to the thought of creating cheddar buns once I saw them during a bakery during one among our camping trips. We always love checking the grocery stores nearby, and you recognize me, I always search for new ideas to bake.

These cheesy buns immediately caught my attention as they glistened with tender-crisp cheese on top. I knew I had to form them.

INGREDIENTS:
For the Tangzhong or Overnight Dough:

  • 2/3 cup boiling water
  • 2/3 cup all-purpose flour

For the Dough:

  • 1 tbsp active dry yeast
  • 3/4 cup warm water 105-115 F
  • 2 and 2/3 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tsp salt
  • 1 large egg
  • 1/4 cup butter melted
  • 1 egg beaten, for egg wash

For the Cheese Filling:

  • 1 and 1/2 cup cheddar cheese shredded

For the Toppings:

  • 1/2 cup parmesan cheese shredded
  • 1 tsp garlic powder
  • 1/4-1/2 cup cheddar cheese shredded
  • sesame seeds for sprinkling on top

INSTRUCTIONS:
Make the Overnight Dough:

  1. In a medium bowl, combine flour and boiling water. Stir until the mixture gathers into a shaggy mass. Shape the dough into a ball. Wrap this in plastic and refrigerate overnight.

Make the Bread Dough:

  1. In a mixing bowl, sprinkle the yeast over warm water and let it sit for about 5 minutes, or until the yeast is soft and dissolved. Add in the sugar, egg, salt,  and melted butter. Stir everything with a wooden spoon.
  2. Add the overnight dough. Add the flour gradually and stir the mixture until it gathers into a soft and shaggy dough. Turn the dough over on a floured board and knead until it is elastic and smooth (You may need to sprinkle just a bit of flour to help with the stickiness of the dough).
  3. Shape the dough into a ball. Place it in a bowl, cover with a clean kitchen towel and let rise for 1 and 1/2 hour or until doubled in size.
  4. Deflate the risen dough. Divide it into 14 or so portions. Flatten a portion using your palms until it is about 1/4 inch thick. Place about a tablespoon of shredded cheddar cheese in the center of the dough. Pull the sides over to the center to cover the filling, then shape the dough into a smooth ball. Tuck the ends under to seal. Repeat with the rest of the dough portions. Place the dough balls on a greased muffin pan. You will need another muffin pan ( or two muffin molds) because this batch makes 14.
  5. Cover loosely and let the dough rise for an hour, or until they are doubled in size. Preheat oven to 350 F. Brush the dough balls with beaten egg. Sprinkle a pinch or two of garlic powder in each of the balls. Top with shredded cheeses. Sprinkle some sesame seeds on each bun. Bake at 350 F for 18-22 minutes, or until the cheese has melted and tops are golden.

This berry cake was originally inspired by Whole Foods. As i used to be trying to find a treat to enjoy with my coffee at whole foods at some point, I found this lovely berry cake. After tasting it, I couldn’t wait to recreate a copycat recipe of this berry chantilly cake at home! and that i must say, this recipe is nearly just like the cake from whole foods!

How to make Chantilly Cake

  • Beat the eggs and sugar during a stand mixer over high speed until the eggs become pale and fluffy. Then add within the vanilla.
  • Next, sift within the flour, cornstarch, and leaven and fold it into the egg mixture. Now pour the cake batter between 2 prepared  (10 inch round baking pans). Bake for 2o minutes at 350 degrees Fahrenheit.

INGREDIENTS:
Ingredients for the cake:

  • 8 eggs
  • 1 1/2 cups sugar
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 2 tsp corn starch

Ingredients for the cream:

  • 2 8oz pkgs. cream cheese, softened
  • 1 8 oz pkg. mascarpone cheese
  • 3 cups powdered sugar
  • 3/4 tsp almond extract
  • 1 1/4 tsp vanilla
  • 2 cups heavy cream

Ingredients for the syrup:

  • 2 cups water
  • 3/4 cup sugar

Berries:

  • 1 1/2 cups strawberries chopped
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries

INSTRUCTIONS:

  1. Line 2 round (10 inch) cake pans with parchment paper and spray with nonstick spray. Set aside.
  2. In the bowl of a stand mixer, beat the eggs with the whisk attachment until foamy. Then slowly add the sugar as you continue to beat it on high speed.
  3. Once the egg and sugar mixture becomes fluffy and airy, beat in the vanilla extract.
  4. Sift the flour, baking powder, and corn starch. Then gently fold it into the batter using a large whisk. Don't mix it around too vigorously... You want to retain as much air in the batter as possible.
  5. Split the cake batter between the two prepared cake pans and bake at 350 degrees Fahrenheit for 20 minutes.
  6. Let the cake cool completely. It's actually best to leave it overnight. Once it's cooled, slice each cake in half using a serrated knife.
  7. In the bowl of a stand mixer combine the softened cream cheese, mascarpone cheese, powdered sugar, almond extract, and vanilla extract.
  8. In a separate bowl beat the heavy cream using an electric mixer. Beat until stiff peaks form.
  9. Using a spatula, fold the heavy cream into the cream cheese mixture. Cover with plastic wrap and refrigerate for at least 1 hour.
  10. Meanwhile in a saucepan whisk together 2 cups of water with 3/4 cup sugar. Bring the sugar to a boil and drop the heat to low. Let it sit over the stove top for 15-20 minutes, or until the mixture begins to thicken. Remove from heat and let it cool completely. This will be the syrup.
  11. Spray 1 side of each cake layer with the syrup.
  12. Begin assembling the cake by spreading the cooled cream cheese filling on top of the first cake layer. Then add a little of each berry. (Put as much as you like).
  13. Stack another cake layer on top and repeat step 12. Continue this until you stack the 4th cake layer. Then cover the top and sides of the cake with the remaining cream. Top with extra berries for a beautiful pop of color.
