  5. In a pot with oil about three inches deep, heat on medium high to 350 degrees.
  6. Add the chicken in batches so you don't crowd the pot or the chicken will stick together and it will lower the temperature significantly causing your chicken to be oily.
  7. Cook chicken until golden brown and when cooked, transfer the pieces to a skillet (this is where we will be tossing with the sauce).
  8. When you finish all the chicken, turn off the oil, turn the skillet onto medium high heat and add the sauce.
  9. Coat the chicken pieces in the sauce and cook for just a few seconds until thickened.
  10. Serve immediately with steamed rice and vegetables.

  11. Season this with a bit of salt & pepper.
  12. Pour this mixture over the chicken.
  13. Do not mix the layers.
  14. Then bake for about 40-45 minutes or until the casserole is set.

  •  1 can (15-ounces) reduced fat coconut milk
  •  1 to 2 tablespoons butter, optional (but delicious)
  •  Hot, cooked rice for serving
  •  Fresh, chopped cilantro, for garnish

INSTRUCTIONS:

  1. Add the oil to the insert of the Instant Pot and select the Saute function (making sure the temperature is adjusted, using the + or - button, to normal). Add the onions, and cook, stirring often, until they start to soften and turn translucent, 2-3 minutes. Add the garlic and ginger and cook for 10-20 seconds.
  2. Add the chicken and cook, stirring often, 1-2 minutes.
  3. Add the potatoes, spices (coriander, garam masala, turmeric, salt and paprika), tomato sauce, and coconut milk. Stir well.
  4. Secure the lid and make sure the valve is closed. Select the Manual or Pressure Cook button and dial up or down to 6 minutes. The Instant Pot will start on it's own.
  5. After the cooking time is finished, quick release the pressure (if it bubbles and spurts through the valve, close the valve, let it sit for 10 minutes and try again), and remove the lid.
  6. Add the butter and give the curry a good stir to melt the butter completely (see note if you want to thicken it up a bit more). Serve over rice garnished with fresh cilantro, if desired.

  2. Preheat large saute pan, add olive oil and melt butter over medium-high heat. Cook the chicken tenders until done, about 8 minutes (3-4 minutes per each side). Remove from the pan.
  3. Add 4 tablespoons of butter to the empty skillet and add remaining seasoning mixture into the butter until cook it until flour is no longer raw. Add more paprika and heavy cream into the skillet. Bring to a boiling point.
  4. Lower heat and simmer 3-4 minutes. Taste the sauce and adjust seasoning to your liking.

Pasta:

  1. Boil pasta in salty water, drain, but do not rinse. Reserve 1/2 cup of pasta water. If you think the sauce needs thinning, add reserved pasta water to the sauce. Add it slow - as much as you would like to have according to your liking.
  2. Add cooked pasta into the sauce and stir until fully coated. Add chicken into the skillet with pasta to reheat.
  3. Serve with sauce spooned over chicken and pasta, and sprinkled with chopped parsley.
